1) Mint and Watermelon Salad

To make this delicious fresh salad, you’ll need:

  • 1 watermelon, cubed or balled
  • 2 tablespoons of avocado oil
  • 1 tablespoon of lime zest
  • 2 tablespoons of fresh lime juice
  • 1/4 cup of mint, minced

2) Strawberry & Banana Paleo “Ice Cream”

Free of added sugar, full of healthy fats, and sweet and delicious as they come, this homemade Paleo ice cream is sure to be a hit. Plus, with only 4 ingredients, it’s easy enough for the kids to do as a fun at-home project.

What you’ll need:

  • 3 peeled frozen bananas
  • 1 cup of frozen strawberries
  • 1/2 cup of unsweetened full fat coconut milk or coconut cream (we like the Native Forest brand)
  • 1 teaspoon of vanilla extract
